Jun Shan Silver Needle is one of China's most famous teas composed of perfectly formed, tender buds. Only produced on Jun Shan Island on Dong Ting Lake, Hunan Province and only for a couple of weeks a year. Yellow teas are processed in a similar way to green teas: picking, withering, firing and one extra step, in which the tea is wrapped in paper and gently warmed (40-60 degrees). this softens the flavour of the tea and removes the vegetal flavour present in green tea.
Mellow and refreshing, a shade darker than a robust Green, developing a light amber to Bristol Cream colour in the cup. Scents of nectar and a hint of remaining vegetation with a touch of smoke to the nose. A mellow, liquor like, sweet taste. Antioxidant level high. Caffeine level low.
Bring water to 180 F. 1 tsp per 6 oz. cup. Infuse for 3 - 7 minutes. Multiple infusions. Contains caffeine.
